Potato Salad

Light potato salad with yogurt and mayonnaise




Ingredients

  • Potato: Boil and mash, add salt and pepper and some vinegar while hot

  • Cucumbers: Slice and sprinkle salt and leave. Squeeze.

  • Apples: Cut into small pieces and soak in salt water for a while

  • Green peas: boil and cool

  • Eggs; Hard boil and chop into pieces (Leave one yolk for mimosa topping later)

  • Onions: Chop in small pieces, soak in vinegar for a while and drain

  • Plain yogurt and Mayonnaise (about half and half)

  • Salt & pepper


Directions

  1. Mix all the ingredients, and cool in the refrigerator.

  2. Press the boiled yolk onto the tea strainer to make sprinkles as decoration on top (Mimosa)


Note

  • Alternatives: carrot, mix vegetables, corn, can of tuna, fish sausage, ham, mustard, lemon juice...
