Yakibitashi/Agebitashi

Sautee or deep fry vegetables and soak in vinegar


Paprika


eggplant and shishito


green pepper, shishito, pumpkin/okra/eggplant


Ingredients

  • Vegetables (paprika, eggplant, shishito, green pepper, pumpkin, okra, zucchini, etc..)

  • Vinegar

  • Mentsuyu

  • dashi powder, mirin, soy sauce, water, etc..


Directions

  1. For yakibitashi, sautee vegetables in a frying pan, or grill in an oven For agebitashi, wash and wipe dry vegetables and deep fry briefly as is, without any coating.

  2. Prepare a sauce by combining mentsuyu, vinegar, mirin, daship powder, water, etc... as you like.

  3. Soak the vegetables in plenty of sauce and leave for a few hours or overnight.


Notes

  • Yaki = bake or grill

  • Age = deep fry

  • Bitashi (Hitashi) = soak
