Yakibitashi/Agebitashi

Sautee or deep fry vegetables and soak in vinegar
Paprika
eggplant and shishito
green pepper, shishito, pumpkin/okra/eggplant
Ingredients
Vegetables (paprika, eggplant, shishito, green pepper, pumpkin, okra, zucchini, etc..)
Vinegar
Mentsuyu
dashi powder, mirin, soy sauce, water, etc..
Directions
For yakibitashi, sautee vegetables in a frying pan, or grill in an oven For agebitashi, wash and wipe dry vegetables and deep fry briefly as is, without any coating.
Prepare a sauce by combining mentsuyu, vinegar, mirin, daship powder, water, etc... as you like.
Soak the vegetables in plenty of sauce and leave for a few hours or overnight.

Yaki = bake or grill
Age = deep fry
Bitashi (Hitashi) = soak
