Kiriboshi Daikon

Dried Daikon Strips



Ingredients:

  • Kiriboshi Daikon

  • Shiitake mushroom (dry or fresh)

  • Carrot

  • Other (chopped green beans, age, sesame, etc...)


Directions:

  1. Soak Kiriboshi Daikon and other ingredients in water to soften

  2. Squeeze lightly and sautee with little oil in a heated pan

  3. Add sake, mirin, dashi (powder), soy sauce, salt, etc to your taste

  4. Simmer for a while (Tastes better overnight. You can freeze.)


Notes:

To make your own kiriboshi daikon, cut fresh daikon into strips (of your favorite thickness) and air dry. Lay flat under the sun during day for a few days, and bring inside during night. Can be preserved for a long time.
