Tougan Soup
Ingredients:
Tougan 2 pounds
Onion 1
Ground meat 1 pound
Kabocha 1/4
Mushroom (any kind) 1 cup
Ginger some. (fresh or powder)
Bay leaf
Potato starch (katakuriko). 2 tbsp
Directions;
Chop onion into fine pieces, and sautee with oil
Add ground meat, ginger, and sautee more
Add other vegetables (mushroom, kabocha...)
Add a bay leaf and water enough to cover the ingredients and boil for a while
Add consome, salt, pepper and simmer
Add tougan (cut in a bite size cutes) toward the end
Adjust the flavor (soup stock, salt, pepper, etc...)
Mix potato starch with a little water, and pour in the soup and stir
Note:
Tougan cooks fast and will melt if cooked long
Tougan can be cut in cubes and freeze - ready to put in soup frozen
Add any vegetables and meat of your pick
