Tataki Kyuri

Cucumber with sesame oil



Ingredients

  • Cucumber (thin Japanese) about 5

  • Sesame oil 2 tbsp

  • Garlic 1 tsp (1-2 pieces, slice or grind)

  • Ginger 1 tsp (1cm long, slice or grind))

  • Hot pepper 1-2 (optional)

  • Soy sauce 70cc (1/3 Japanese cup)

  • Vinegar 70cc (1/3 Japanese cup)

  • Mirin 50cc (optional)

  • Water 70cc (1/3 Japanese cup)


Directions

  1. Hit and chop cucumber with the backside of a knife (so the flavor sinks in)

  2. In a small pan, heat up the mixture of sesame oil, garlic, and ginger

  3. Add hot pepper, soy sauce, and vinegar to boil

  4. Add water and mirin and boil for a while

  5. Pour on the cucumber

  6. Ready in a few hours

  7. Keep in refrigerator for up to several days
