Tataki Kyuri
Cucumber with sesame oil
Ingredients
Cucumber (thin Japanese) about 5
Sesame oil 2 tbsp
Garlic 1 tsp (1-2 pieces, slice or grind)
Ginger 1 tsp (1cm long, slice or grind))
Hot pepper 1-2 (optional)
Soy sauce 70cc (1/3 Japanese cup)
Vinegar 70cc (1/3 Japanese cup)
Mirin 50cc (optional)
Water 70cc (1/3 Japanese cup)
Directions
Hit and chop cucumber with the backside of a knife (so the flavor sinks in)
In a small pan, heat up the mixture of sesame oil, garlic, and ginger
Add hot pepper, soy sauce, and vinegar to boil
Add water and mirin and boil for a while
Pour on the cucumber
Ready in a few hours
Keep in refrigerator for up to several days
