Sweet Potato Pudding

No flour and light with rich flavor of sweet potato

Sweet potato digging event at Legacy Farm (October, 2022)


Ingredients

  • Sweet Potato (raw) a few = (mashed) 250g (1/2 lb)

  • Milk. 150cc

  • Sugar 3-4 tbsp

  • Egg 2

  • Butter 1 tbsp

  • Brandy or Rum (optional). 1 tbsp

  • black sesame for decoration


Directions

  1. Bake sweet potato in an oven until the center is soft, peel the skin and mash

  2. Mix all the ingredients in a FP or blender until smooth

  3. Preheat the oven to 350F (170C)

  4. Pour into a baking container and bake until the center is cooked for about one hour

  5. Cool and cut into desirable shapes
