Sweet and Salty Satoimo

Satoimo = Japanese Taro, a starchy root crop




Ingredients

  • Satoimo

  • Dashi

  • Mirin or sugar

  • Soy Sauce

  • Sesame


Directions

  1. Wash satoimo and boil with skin on until the center is cooked

  2. Peel the skin (this way is easier)

  3. Cut into a bite size

  4. In a pan, heat dashi soup (dashi powder and water), mirin (or sugar), soy sauce to boil

  5. Add satoimo and boil with high heat until the juice evaporates and gets thick

  6. Sprinkle sesame


Notes

  • Satoimo is an ancient food. Its starch is believed to reduce high blood pressure and cholesterol.
