Vegetables with mashed tofu
Ingredients
Tofu 1
Vegetables (spinach, shungiku, boccoli, green bean, hijiki seaweed, etc.)
Soy sauce 1 tbsp
Crushed sesame 1 tbsp
Sugar (or Mirin) some
Optional: Dashi powder, Miso, Sesame oil, Walnuts, etc.
Direction
Blanch the vegetables and chop in small pieces
Tap tofu with paper towel to remove water, and smash with a fork (or traditionally use suribachi as below)
Make a sauce and mix all
Cool and serve
Mash tofu with suribachi (dish) and surikogi (wooden bar)
