Homey potato dish with or without meat stewed in soy sauce/mirin

Potatoes and green beans from Legacy Farm


Ingredients

  • Potato 2 or 3

  • Meat (beef or chicken, optional)

  • Other ingredients (carrot, onion, green bean, shiitake mushroom, green pea, snow pea, chikuwa, ito konnyaku = shirataki, etc.)

  • Soy sauce 2 tbsp

  • Mirin (or sugar) 2 tbsp

  • Sake (optional) 2 tbsp

  • Dashi juice (or dashi powder mixed with water) 100 ml


Directions

  1. Skin potatoes, cut vegetables and meat

  2. In a pot, add oil and sautee meat

  3. Add other vegetables and sautee lightly

  4. Add mirin (or sugar) and stir

  5. Add soy sauce, sake, dashi, some water, cover the pot and simmer with low heat until the vegetables are tender

  6. Adjust the amount of soy sauce, mirin (sugar) to your taste
