Mustard Cucumber

Pickled cucumber with karashi mustard



Ingredients

  • Cucumber. 500g

  • Mustard powder 10g (about 1.5 tbsp)

  • Salt 25g (little less than 1.5 tbsp)

  • Sugar 60g (about 4 tbsp)

  • Sake 50 cc (optional)


Directions

  1. Use whole cucumber or cut in pieces

  2. Rub salt on cucumber and leave for 2 hours

  3. Add mustard powder, sugar, sake

  4. Best after a day or two in refrigerator


Note

  • Can be soaked and saved for several days

  • Can be soaked in a ziplock

  • Stronger flavor if you cut in pieces and soak

  • Seeds can be removed or leave them on

  • Adjust the amount of salt and sugar according to your taste
