Mustard Cucumber
Pickled cucumber with karashi mustard
Ingredients
Cucumber. 500g
Mustard powder 10g (about 1.5 tbsp)
Salt 25g (little less than 1.5 tbsp)
Sugar 60g (about 4 tbsp)
Sake 50 cc (optional)
Directions
Use whole cucumber or cut in pieces
Rub salt on cucumber and leave for 2 hours
Add mustard powder, sugar, sake
Best after a day or two in refrigerator
Note
Can be soaked and saved for several days
Can be soaked in a ziplock
Stronger flavor if you cut in pieces and soak
Seeds can be removed or leave them on
Adjust the amount of salt and sugar according to your taste
