Mashed Satoimo with Ume

Variation with satoimo


Ingredients;

  • Satoimo

  • Umeboshi (remove seeds and make into paste with a fork) or ume paste in a tube

  • Dashi powder (or Kombu cha powder)


Directions:

  1. Boil satoio and mash.

  2. While it is hot, add umeboshi paste and dashi powder


Notes:

  • Easy to peell the skin when you boil satoimo with skin on

  • As a variation, add mayonnaise and other ingredients as in regular potato salad

  • Suggested toppings; chopped shiso leaves, green onion, sesame seeds, cut nori seaweed, etc
