Variation with satoimo
Ingredients;
Satoimo
Umeboshi (remove seeds and make into paste with a fork) or ume paste in a tube
Dashi powder (or Kombu cha powder)
Directions:
Boil satoio and mash.
While it is hot, add umeboshi paste and dashi powder
Notes:
Easy to peell the skin when you boil satoimo with skin on
As a variation, add mayonnaise and other ingredients as in regular potato salad
Suggested toppings; chopped shiso leaves, green onion, sesame seeds, cut nori seaweed, etc
