Kanpyo

Dried strips of Yuugao (melon family)

Serve as is or use in sushi, mix with rice or Kombu roll


Product of Tochigi prefecture


Ingredients:

  • Kanpyo (dry) about 40g

  • Salt

  • Water 200 cc

  • Soy sauce 4 tbsp

  • Mirin 4 tbsp

  • Sugar 2 tbsp


Directions;

  1. Soak kanpyo in water for a few minutes

  2. Drain, squeeze lightly, then prinkle salt and rub it

  3. Rinse lightly, and put in a boiling water for 10 minutes

  4. Drain and squeeze lightlyl

  5. In a pot, boil water, soy sauce, mirin, sugar

  6. Add kanpyo to simmer
