Ebi Daikon
Shrimp in Daikon
Ingredients
Daikon radish
Shrimp
Starch (potato starch, flour, etc..)
Dashi, Sake, Mirin
Shiitake mushroom (optional)
Directions
Cut daikon in round slices (1-2 inches thick)
Cut out the center to make a hole (not so deep) using melon cutter or a spoon
Boil and cook daikon in water, mirin, sake, dashi, etc..
Chop shrimps into pieces and mix with salt, sake, starch
Put the mixture into the daikon hole
Cook again until the mixture get cooked, pouring the sauce over occasionally
