Easy Yakitori

Using Tokyo negi


Ingredients

  • Chicken

  • Tokyo Negi, mushroom, etc..

  • Shio koji

  • Sake, Pepper


Directions

  1. Cut chicken into a bite size

  2. Marinate in shio koji*, pepper, sake for more than 30 minutes - overnight (Turn upside down once in a while)

  3. Cut the vegetables

  4. Stick the chicken and vegetables on a skewer in turn

  5. Bake well in an oven or pan, or BBQ


Note

  • Shio koji (塩麹) is a Japanese cure/marinade made by fermenting grain koji (cooked grain, traditionally rice, etc..), water, and salt until the mixture thickens to a porridge-like consistency and takes on a sweet, funky aroma. Approximately, use 1/10 of the total ingredients
