Cucumber Vinegar Salad

Great in summer to consume lots of cucumbers



Ingredients

  • Cucumber

  • Others (Any combination - egg, imitation crab, chikuwa, sesame, crushed sesame, wakame seaweed...)

  • Vinegar *


Directions

  1. Slice cucumbers thin, and soak in salted water (water 500ml + salt 1 tbsp) for 10 minutes

  2. Soak dry wakame seaweed in water

  3. Drain and squeeze 1 and 2

  4. Fry a beaten egg in a frying pan into a thin flat sheet

  5. Cut imitation crab and egg thin strips

  6. Mix all and pour vinegar


Notes *

  • Nihaizu (二杯酢) Vinegar 3 tbsp, Soy sauce 2 tbsp

  • Sanbaizu (三杯酢) Vinegar 3 tbsp, Soy sauce 1 tbsp, Sugar 2 tbsp

  • Flavored sushi vinegar or flavored vinegar powder (Sushinoko) can be used instead
