Cucumber Vinegar Salad

Great in summer to consume lots of cucumbers
Ingredients
Cucumber
Others (Any combination - egg, imitation crab, chikuwa, sesame, crushed sesame, wakame seaweed...)
Vinegar *
Directions
Slice cucumbers thin, and soak in salted water (water 500ml + salt 1 tbsp) for 10 minutes
Soak dry wakame seaweed in water
Drain and squeeze 1 and 2
Fry a beaten egg in a frying pan into a thin flat sheet
Cut imitation crab and egg thin strips
Mix all and pour vinegar
Notes *
Nihaizu (二杯酢) Vinegar 3 tbsp, Soy sauce 2 tbsp
Sanbaizu (三杯酢) Vinegar 3 tbsp, Soy sauce 1 tbsp, Sugar 2 tbsp
Flavored sushi vinegar or flavored vinegar powder (Sushinoko) can be used instead
