Burdock (Gobo) and Persimmon Salad
Great combination with mayonnaise and sesame
Ingredients
Burdock (Gobo) fresh or dry
Persimmon
Green vegetable (Spinach, Broccoli, etc..)
Mayonnaise
Crushed sesame
Mentsuyu (or combination of oy sauce, mirin, dashi, ...)
Directions
Cut fresh gobo into thin sticks and boil, or soak and soften the dry gobo
Boil and cut green vegetable and squeeze
Cut persimmon
Mix all with mayonnaise, crushed sesame and mentsuyu
Notes
Persimmon is a nice accent of flavor
Dry vegetables are convenient to use
