Burdock (Gobo) and Persimmon Salad

Great combination with mayonnaise and sesame



Ingredients

  • Burdock (Gobo) fresh or dry

  • Persimmon

  • Green vegetable (Spinach, Broccoli, etc..)

  • Mayonnaise

  • Crushed sesame

  • Mentsuyu (or combination of oy sauce, mirin, dashi, ...)


Directions

  1. Cut fresh gobo into thin sticks and boil, or soak and soften the dry gobo

  2. Boil and cut green vegetable and squeeze

  3. Cut persimmon

  4. Mix all with mayonnaise, crushed sesame and mentsuyu


Notes

  • Persimmon is a nice accent of flavor

  • Dry vegetables are convenient to use
