Popular in Okinawa, Also known as. Nigauri or Bittermelon


With scrambled egg


With sesame oil, shio kombu, shio koji, etc..



Directions (to remove the bitteness)

  1. Cut goya into half vertically

  2. Remove the inside (soft, cotton-like) and seeds using a spoon

  3. Slice thin, sprinkle some salt and sugar, and leave for a while

  4. Boil water and put goya with salt and sugar on briefly

  5. Drain and ready to use
