Fuki

Fuki is a stalk vegetable, also known as butterbur



Fuki has some bitterness. To remove it, "How to prepare Fuki"


Directions (Left: Fuki and Age)

  1. Cook in soy sauce, sake, mirin, dashi

  2. Add age

  3. Tastes better the next day


Directions (Right: Kyarabuki)

"Kyarabuki" is Tsukudani (佃煮) is something that has been simmered in soy sauce and mirin. Thinner fuki are used for kyarabuki.

  1. Simmer in soy sauce, sake, mirin, dashi, water with low heat until evaporates

  2. Add sansho seeds, if you have
