Fuki is a stalk vegetable, also known as butterbur

Cook in soy sauce, sake, mirin, dashi

"Kyarabuki" is Tsukudani (佃煮) is something that has been simmered in soy sauce and mirin. Thinner fuki are used for kyarabuki.
Simmer in soy sauce, sake, mirin, dashi, water with low heat until evaporates
