Earthy flavor and aroma with an impressive nutrition profile
Using beets from Legacy Farm
Variations (remove skin):
Raw, sliced
Simply boil in some water
Add in soup (see Borscht)
Cut and roast (or roast in a foil), glaze with vinegar and soy sauce
Stems and leaves are edible (cook in the same manner as spinach)
