Yellow Squash Soup


Ingredients:

  • Yellow Squash 2,3

  • Onion 1/2

  • Potato 3 small ones

  • Bay leaf 1 or 2

  • Salt and ppper

  • Vegetable stock

  • White wine

  • Milk (any kind)

  • Curry powder (optional)

  • Parsley (topping, optional)


Directions:

  1. Cut vegetables

  2. Sautee onion and other vegetables

  3. Pour water and simmer with bay leaf, salt, pepper,

  4. Add wine, vegetable stock, milk, curry powder and keep simmering

  5. Adjust the salt and spices to your taste

  6. Blend everything with a mixer or food processor

  7. Sprinkle the parsley on top (optional)

  8. Serve warm or cold
