Ratatouille

Hot or cold with summer vegetables


Ingredients

  • Vegetables (onion, carrot, celery, zucchini, eggplant, green pepper, paprika, mushroom, okra, tomato, etc.)

  • White wine

  • Tomato juice (squeeze fresh tomato or use tomato juice or pasta sauce )

  • Bay leaf 1-2

  • Consomme (vegetable bouillon)

  • Olive oil

  • Salt & pepper


Directions

  1. Chop the vegetable into same size and sautee lightly with olive oil

  2. Add water and white wine just enough to cover the vegetables (vegetables will produce water)

  3. all other ingredients and simmer until the vegetables are tender

  4. Serve hot or cold


Notes

  • Tastes better the next day

  • Can add noodle/macaroni as soup pasta
