Persimmon with mashed tofu
Mixed with Yogoshi Miso (with black sesame) ↓
Yogoshi Miso - Local food from Toyama prefecture, Miso with black sesame
With spinach
Ingredients:
Persimmon 3-4
Tofu 1/2 (firm is better)
Crushed sesame (surigoma) 1-2 tbsp (or adjust to your taste)
Sugar 1-2 tsp (or adjust to your taste, Mirin can be used )
Soy sauce 1 tsp adjust to your taste
Miso 1 tsp or adjust to your taste
Roasted walnuts (or pecan nuts, optional)
Directions;
Cut persimmon into bite size
Drain and lightly dry tofu with a paper towel, mash, and mix with sesame, sugar, soy sauce, miso...
Mix persimmon and tofu mixture
Add crushed walnuts
Serve cold
Note:
Shira-ae is a type of side dish using mashed tofu
Add a desirable amount of sesame, sugar, soy sauce, miso..
