Nanbanzuke with Salmon
Fried salmon marinated in vinegar sauce
Ingredients:
Salmon 2lbs
Onion 1
Vegetables; Paprika, green pepper, carrot, etc. (optional)
Hot pepper (optional)
Flour (potato starch or corn starch) 2 tbsp
Oil (for deep fry)
Vinegar 1 cup
Soy Sauce 1 cup
Mirin 1 cup
Sugar 2 tbsp. (adjust to your taste)
Dashi water 5 cup
Directions:
Cut salmon in a bite size
Cut vegetables into thin strips
Mix vinegar, soy sauce, mirin, sugar and dashi water in a pan, add hot pepper, boil and keep it warm
Coat the salmon with flour lightly, and deep fry
In a container, put the fried fish and vegetables in layers, topped with the vegetables, then pour over the warm vinegar mix
Close the lid and let it cool
