Nanbanzuke with Salmon

Fried salmon marinated in vinegar sauce

Ingredients:

  • Salmon 2lbs

  • Onion 1

  • Vegetables; Paprika, green pepper, carrot, etc. (optional)

  • Hot pepper (optional)

  • Flour (potato starch or corn starch) 2 tbsp

  • Oil (for deep fry)

  • Vinegar 1 cup

  • Soy Sauce 1 cup

  • Mirin 1 cup

  • Sugar 2 tbsp. (adjust to your taste)

  • Dashi water 5 cup


Directions:

  1. Cut salmon in a bite size

  2. Cut vegetables into thin strips

  3. Mix vinegar, soy sauce, mirin, sugar and dashi water in a pan, add hot pepper, boil and keep it warm

  4. Coat the salmon with flour lightly, and deep fry

  5. In a container, put the fried fish and vegetables in layers, topped with the vegetables, then pour over the warm vinegar mix

  6. Close the lid and let it cool
