Mochi Muffin

Mochi texture muffin with red bean paste inside - just mix and bake



Ingredients (about 18 in regular muffin cup)


  • Mochi (sweet rice) flour (1 box 450g)

  • Sugar 120 cc

  • Egg 3

  • Oil 200 cc. (olive oil is not recommended)

  • Milk (any kind) 480 cc

  • Baking Powder 1tsp

  • Salt 1/2 tsp

  • Sweet red bean paste about 1lb


Directions

  1. Mix all the ingredients except sweet red bean paste to make dough

  2. Pour the dough to cover the bottoms of the muffin cups

  3. Add sweet red bean paste in the center

  4. Pour the dough over to cover the red bean paste completely

  5. Preheat 180C, bake 45-50 minutes until light brown on the top
