Matsukaze yaki

Ingredients:

  • ground chicken or turkey 1 pound

  • green onion or regular onion, chopped fine

  • dry shiitake mushroom soaked in water, lightly squeezed and chopped

  • ginger (optional), as much as you like

  • miso paste (optional), adjust to your taste

  • mirin, sake, salt, pepper, adjust to your taste

  • potato starch or flour to stick the ingredients, 1-2 tbsp

  • 1 egg (optional)

  • poppy seeds (or sesame as alternative, optional) , a handful



Directions:

  1. Mix all the ingredients except poppy seeds well

  2. Lay flat in a baking pan (on the baking sheet), about 2 cm in thickness

  3. Spread the poppy seeds on the top and press lightly

  4. Bake in an oven (or in a frying pan as an alternative) at 350F for about 20 min. until inside is cooked

  5. Cool it and cut into bite sizes. Cut in the shape of a fan and stick a toothpick for New Year osechi.



Note:

While the top surface is decorated with poppy seeds, the other side is plain and has nothing. The "plain" underside of the dish represents honesty and having "nothing to hide," acting as a symbol of good luck and sincerity for the new year.
