Persian green bean rice
Ingredients
green bean 1 pound (500g)
onion 1
meat (of your choice or no meat) ground beef, chicken, etc...
turmeric, salt, pepper
basmati rice 3 cups
tomato paste (optional)
Directions
Soak the rice in a water with some salt for over one hour
Chop green beans and sautee in a pan and set aside
Sautee chopped onion in a heated pan with plenty of oil until golden brown, then add turmeric and meat (if you like) , add tomato paste, and sautee more
Add water in 3 and boil then add the green beans (2), boil some more, then set aside
Bring plenty of water to boil and add some salt. Drain add the soaked rice (1) .
Boil until the rice is hard halfway, then drain into a colander in the sink.
Place the pot back on the burner, add plenty of oil at the bottom and spread 1/3 of the rice.
Add 1/3 of the green bean mixture (4) on top of the rice (7)
Repeat and make a total 3 layers of rice and bean mixture.
Wrap the lid with a paper towel (or cloth) to stop the water dripping into the rice, then cover the pot on middle heat for 15 minutes.
Reduce the heat to low for another 30 minutes. Try not to open the lid.
Flip the pot into a large flat plate, so the crispy bottom comes on the top
