Jam Chicken
Teriyaki style using fruit jam
Sautee briefly and cover to simmer
Ingredients
Chicken 1 lbd
Jam (marmalade, apricot, yuzu, etc....) 2 tbsp
Soy sauce 1-2 tbsp
Vinegar 1-2 tbsp
Ginger and sake (optional)
Directions
Chop the chicken and marinate in sliced onion, sake, pepper, oil, etc. for a while
Sautee both sides briefly in a heated frying pan
Remove the chicken from the pan and clean the pan with paper towel
Put back the chicken into the pan, add vinegar sake and ginger and cover
Simmer until the meat is cooked
Pour the mixture of jam and soy sauce over the chicken, and simmer with a cover
Open the cover and simmer with high heat until the sauce thickens
