Dorayaki

Japanese pancake with sweet red bean paste



Heating up Yakigote (bought in Japan)


Ingredients (about 30 pieces = 15 dorayaki, 7cm in diameter)

  • Egg 3

  • Flour 180g

  • Sugar 120g

  • Baking Soda 1/2 tsp (mix with 1 tsp)

  • Honey 2 tbsp

  • Sweet red bean paste


Directions

  1. Mix egg, sugar and honey (Until when you scoop up the dough, the place where it fell becomes a mountain, but it disappears immediately)

  2. Add baking soda

  3. Add 40ml of water, then add flour

  4. Let it sit for 15 minutes with saran wrap on

  5. Add additional 40ml of water and stir

  6. Preheat hotplate at 140C and cook without oil

  7. Cook one side. When you see the bubbles, turn over and cook the other side

  8. Sandwich sweet bean paste between two pieces


Note

  • Yakigote = branding iron

  • Heat up yakigote with gas burner, then press onto the surface of the dorayaki

  • The handle of yakigote does not get hot
