Daigaku Imo

Candied Sweet Potato



Ingredients

  • Sweet potato 2 mid size

  • Sugar 4 tbsp

  • Mirin 1 tbsp

  • Water 2 tbsp

  • Soy sauce 1 tbsp

  • Black sesame

  • Oil


Directions

  1. Cut the sweet potato and soak in water for a while, then drain

  2. Tap dry with cloth


For deep fry:

  1. Deep fry the sweet potatoes and set aside

  2. In a pan, boil these and add sweet potatoes to caramelize

  3. Sugar 4 tbsp, Mirin 1 tbsp, Water 2 tbsp, Soy Sauce 1 tbsp

  4. Cool on cooking sheet, sprinkle black sesame


For using frying pan:

  1. In a pan, add oil 3 tbsp, sugar 3 tbsp, and lay the sweet potatoes and cover

  2. Heat on medium heat for 10 minutes, mix sometimes and cook more

  3. When the center gets soft, remove from the pan and sprinkle black sesame


Note

Cut the sweet potatoes to have many pointed edges (crispy)
