Creamy Croquette
Easy to shape with half frozen dough
Mini deep fryer we've been using for many years
Ingredients
(Inside)
Inside of your pick (onion, mushroom, corn, seafood - shrimp, crab, etc.. )
Salt & pepper
Consomme
White wine
(White sauce)
Butter
Flour 6 tbsp
Milk (of your choice) 400cc
Bay leaf 1
Fresh cream (optional). 100cc
(Deep fry)
Flour
Egg
Bread crumb
Directions
Cut the inside ingredients fine.
Add salt & pepper, consomme, white wine and set aside
Heat a small amount of butter in the pan, and add flour (6 tbsp) slowly.
Warm the milk with a bay leaf.
Add the warmed milk into 3, and mix slowly until it thickens (Add fresh cream, if desired)
Add 2 into 5 and mix
Take out and lay into the flat container to cool down
Wrap and put into the freezer for more than 30 min
Shape into oval, and deep fry in the conventional way (flour --> beaten egg --> bread crumb)
