Chawan mushi
Steamed savory egg pudding
Ingredients
Egg
Small amount of each as inside ingredients (raw chicken breast, carrot, shiitake, shrimp, ginkgo seed, snow pea, chikuwa, kamaboko, mitsuba, cooked udon noodle, etc..)
Dashi soup (or diluted mentsuyu)
Directions
Cut the ingredients into proper sizes
Make dashi soup and egg mixture Typical Proportion = Beaten egg (1) : Dashi soup (3)
In individual container, put small amount of each ingredients and pour 2
Boil water (about half the hight of the container), then put the containers in the pot
Wrap the cover with a cloth or paper towel and cover the pot (to prevent the water dripping)
Do not open the cover for 2 minutes on middle heat and 8 minutes on low heat
It is ready when you see the clear juice on the surface
Note
Chawan (茶碗)= an individual ceramic bowl, Mushi (蒸し)= steamed
Easy dashi soup: dashi powder + water
Do not boil on high heat to prevent the surface of the pudding from developing tiny bubbly holes.
You can make in a large container to share
