Boiled Soybean
Ingredients
Soybean
Any combinabion of other ingredients (Carrot, Hijiki seaweed, Gobo, Konnyaku, Kombu seaweed, Shiitake mushroom, Lotus, Chikuwa, Bamboo shoot, etc.. )
Dashi soup
Soy sauce, mirin, sake, etc..
Directions
Wash and soak soybeans in plenty of water overnight
Chop ingredients other than soybeans into small pieces, almost the same size as soybean
Combine and boil the soybeans and other ingredients* in dashi soup and water, skimming the scum on the surface (Otoshi buta* may help)
Add soy sauce, mirin, sake, etc..
Note
* You can boil either in the soaked water or drain/fresh water. Boiling in the soaked water is nutritious, but may contain some bitterness.
* Otoshi buta (落し蓋, literally: drop-lid) are Japanese-style drop-lids for use in Japanese cooking. These round lids float on top of the liquid in a pot while simmering foods. They ensure that the heat is evenly distributed and reduce the tendency of liquid to boil with large bubbles.
