Pickles (Vinegar)

Homemade pickles with vinegar base



Myoga


Radish


Ingredients

  • Vegetables (kabu, radish, lotus, *myoga, etc..). 400g

  • Vinegar. 1 tbsp

  • Sugar 1 tbsp

  • Salt 1 tsp

Directions

  1. Wash myoga well (may contain soil at the bottom)

  2. Cut vegetables

  3. Mix all and put in container with a weight on, and leave in a refrigerator


Note

  • Best after 1 day

  • Cn add kombu sheet, hot pepper, lemon or yuzu, ginger, etc

  • *Myoga or Japanese ginger, Myoga has a very distinctive flavor with a mild ginger overtone and zesty tang
