Pickles (Vinegar)
Homemade pickles with vinegar base
Myoga
Radish
Ingredients
Vegetables (kabu, radish, lotus, *myoga, etc..). 400g
Vinegar. 1 tbsp
Sugar 1 tbsp
Salt 1 tsp
Directions
Wash myoga well (may contain soil at the bottom)
Cut vegetables
Mix all and put in container with a weight on, and leave in a refrigerator
Note
Best after 1 day
Cn add kombu sheet, hot pepper, lemon or yuzu, ginger, etc
*Myoga or Japanese ginger, Myoga has a very distinctive flavor with a mild ginger overtone and zesty tang
