Pickles (Soy Sauce)
Homemade pickles with soy sauce base
With Kabu
With Mabiki Daikon and Yuzu, Shio-Kombu
Ingredients
Vegetables (Daikon, Kabu, Cucumber, Carrot, etc..). 400g
Soy Sauce 4 tbsp
Sake 2 tbsp
Water 2 tbsp
Mirin 2 tbsp
Kombu sheet (optional). 5x5 cm
Directions
Slice the vegetables
Put in a container with a weight on and leave in the refrigerator
Notes
Best on the 2nd day
Add ginger, hot pepper, yuzu peel, shio-kombu (optional)
