Pickles (Soy Sauce)

Homemade pickles with soy sauce base


With Kabu



With Mabiki Daikon and Yuzu, Shio-Kombu


Ingredients

  • Vegetables (Daikon, Kabu, Cucumber, Carrot, etc..). 400g

  • Soy Sauce 4 tbsp

  • Sake 2 tbsp

  • Water 2 tbsp

  • Mirin 2 tbsp

  • Kombu sheet (optional). 5x5 cm


Directions

  1. Slice the vegetables

  2. Put in a container with a weight on and leave in the refrigerator


Notes

  • Best on the 2nd day

  • Add ginger, hot pepper, yuzu peel, shio-kombu (optional)
