Homemade pickles with salt base



Kabu



Daikon, Daikon leaf, Shio-kombu, Carrot



Hari Hari Zuke with Daikon



Hakuzai, Yuzu, Shio-kombu



Takuan with mabiki daikon, turmeric


Ingredients

  • Vegetables (Daikon, Kabu, Cabbage, Hakusai, Cucumber, etc...) 400g

  • Salt 1 tbsp

  • Sake 1tbsp

  • Kombu sheet 3 of 5x3 cm


Directions

  1. Cut the vegetables

  2. Put in container with a weight, and leave in the refrigerator


Notes

  • Add shio-kombu, yuzu leaf, carrot, ginger, shiso leave, hot pepper, etc
